Meatless Monday at the Booth

The Greenhabilitator kicks off Meatless Monday at the Booth...

By now, most everyone who is concerned about the health of their bodies or the environment has heard of the Meatless Monday movement.

Did you know that Presidents Wilson, Truman and Roosevelt all encouraged voluntary meatless days during both cold wars? Or that Gwyneth Paltrow, Yoko Ono, Kate Moss, Al Gore, Sir Paul McCartney, and Michael Pollan all observe this meatless day? Several public school districts and college campuses - including the University of California, Santa Barbara and Oxford University in England - have also joined the meatless revolution.

According to the Meatless Monday non-profit organization~
"Going meatless once a week may reduce your risk of chronic preventable conditions like cancer, cardiovascular disease, diabetes and obesity. It can also help reduce your carbon footprint and save precious resources like fresh water and fossil fuel."

Here at the Green Phone Booth, we'd like to encourage all of our readers to join us in the Meatless Monday movement. Each Monday, we'll be posting recipe ideas from our eco-heroes and readers, as well as tips and stories to help you make the day meatless.

Today's recipe for Spicy Stir-Fried Broccoli with Tomato Chickpea Ragout comes from Mary at Make it From Scratch. (And it happens to be what I'm making for dinner tonight - thanks Mary!) 

  • 1 pound whole broccoli or florets
  • 4 large cloves garlic
  • 1 28-ounce can whole tomatoes
  • 1/4 cup extra-virgin olive oil
  • 7 ounces canned chickpeas, drained
  • Kosher salt (optional)
  • 1 tablespoon unsalted butter (optional)
  • Crushed red pepper flakes
  • 1/4 to 1/2 cup water, plus more as needed

I'm new to this Mr. Linky thing and am still trying to work out the kinks. Sorry if it shows my name and URL in the boxes - I was doing a test and it seems to be stuck there. Hope to have that ironed out next week!

I think it's nice if you put your name and then your recipe title in parentheses. That way people know what you're cooking up and it's easier to browse.

I already had mine posted a while ago on my blog, but I hope everyone likes it. The teriyaki gluten makes a really good sandwich but can also be eaten on rice or pasta. Best of all it's meatless!

Instead of doing Meatless Mondays I try to do one vegetarian meal a day - usually lunch. I'm a rebel. I do the meatless thing unlike everyone else :)

Meatless Monday is a great idea! This reminds me of a post we did way back in January -- "go meatless at least once a week!". We didn't specify a particular day so readers would be free to choose any day of the week but now that I really think about it, Monday is really the best day to go meatless. Why? Because it's a healthy way to the week!
