By now, most everyone who is concerned about the health of their bodies or the environment has heard of the Meatless Monday movement.
Did you know that Presidents Wilson, Truman and Roosevelt all encouraged voluntary meatless days during both cold wars? Or that Gwyneth Paltrow, Yoko Ono, Kate Moss, Al Gore, Sir Paul McCartney, and Michael Pollan all observe this meatless day? Several public school districts and college campuses - including the University of California, Santa Barbara and Oxford University in England - have also joined the meatless revolution.
According to the Meatless Monday non-profit organization~
"Going meatless once a week may reduce your risk of chronic preventable conditions like cancer, cardiovascular disease, diabetes and obesity. It can also help reduce your carbon footprint and save precious resources like fresh water and fossil fuel."
Here at the Green Phone Booth, we'd like to encourage all of our readers to join us in the Meatless Monday movement. Each Monday, we'll be posting recipe ideas from our eco-heroes and readers, as well as tips and stories to help you make the day meatless.
If you have a recipe you'd like to share with Booth readers, post about it on your blog, then use Mr. Linky below to link to it. We'll chose a winner to be featured in next week's Meatless Monday post. If you don't have a blog of your own, you can post a photo to our Facebook page.
Today's recipe for Spicy Stir-Fried Broccoli with Tomato Chickpea Ragout comes from Mary at Make it From Scratch. (And it happens to be what I'm making for dinner tonight - thanks Mary!)
- 1 pound whole broccoli or florets
- 4 large cloves garlic
- 1 28-ounce can whole tomatoes
- 1/4 cup extra-virgin olive oil
- 7 ounces canned chickpeas, drained
- Kosher salt (optional)

- 1/4 to 1/2 cup water, plus more as needed
Happy Meatless Monday everyone! Even if you don't have a recipe to share, let us know what's on your plate today.
