I started a Food Stamp Challenge over the weekend on the Living Simple & Green board at iVillage. In order to save money in that challenge, we'll be adding more meatless meals over the next few weeks, so I could really use your ideas.

Last week's Meatless Monday brought us several great recipes and ideas.

Toni's Basil Bean Soup is going on my "must try" list. I've been loving leeks this season and, combined with garlic, white beans, and potatoes, this sounds delicious.

The Conscious Shopper's Golden Chickpea Patties with white gravy look like great comfort food and remind me of my southern roots.

And Nana Sadie reminds us that you can shake dinner up with a light fruit and cottage cheese plate.

I checked out your food stamp challenge. Wow! In North Carolina, the food stamp allotment is more than twice what you're working with. In fact, I have a friend that just got on food stamps and is now able to feed her family a really healthy diet for the first time. I didn't realize it differed so much from state to state. Feeling pretty good about my state now.
