Meatless Monday ~ Breakfast for Dinner

Welcome back to Meatless Monday at the Green Phone Booth.

My absolute favorite meal of the day is breakfast, so it's a no-brainer here in The Conscious Shopper home to eat breakfast foods for dinner. Our favorite brinner meal is also meat free: pancakes!

Here's my favorite pancake recipe:

South Pacific Fruit Pancakes
(from The Book of Yogurt)

4 Tbsp. butter
3 Tbsp. brown sugar
2 tsp. cinnamon
1 ripe mango, peeled, seeded, and cut in julienne
1 egg
1/2 c. unflavored yogurt
2/3 c. unsifted all-purpose flour
1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
2 Tbsp. powdered sugar
  • Melt 4 Tbsp. butter in a pan on the stove. Remove 1 Tbsp. of butter and set aside to be used later.
  • Add the brown sugar and 1 1/2 tsp of the cinnamon to the melted butter. Add the mango. Cook until the mango is soft. Turn off the heat.
  • Beat the egg in a bowl and then add the the yogurt and the reserved 1 Tbsp. butter.
  • Sift the flour, baking powder, baking soda, salt, and 1 Tbsp of the powdered sugar into the egg mixture and blend thoroughly. Add the mango mixture and stir.
  • Cook the mango batter like typical pancakes until browned on both sides.
  • Sprinkle the remaining 1 Tbsp. powdered sugar and 1/2 tsp. cinnamon over the pancakes.
A couple notes:
  • This recipe says it serves four, but my family of two adults and three small children always doubles the recipe.
  • If you don't have mangoes (or are trying to eat locally), you can also use any soft fruit like peaches, pineapples, or even apples. In the picture below, we used peaches, and my husband decided to top them with peach jam rather than powdered sugar.

I tried to post a link to the Meatless Monday segment on NPR yesterday morning (Aug. 9th). Maybe it got flagged as spam because of the link?

Just thought it was interesting to hear that the concept is spreading.
