Healthier Banana Bread

It's the first of the year so most of us are most likely trying to eat a bit healthier. This banana bread still has a fair amount of sugar but calls for sucanat which is an unrefined sugar that is better for us and whole wheat flour instead of white flour. It's very quick and easy and very yummy!

  • 1/2 cup butter
  • 1 cup sucanat (could cut this a bit and/or replace some with honey)
  • 2 eggs, slightly beaten
  • 3 medium ripe bananas (1-2 cups mashed)
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/3 cup hot water

  1. Mix the melted butter, sugar, mashed bananas and eggs very well.
  2. In a separate bowl, stir together flours, salt, and baking soda.
  3. Add dry ingredients to banana mixture, alternately with hot water.
  4. Oil the pan.
  5. Scoop the batter into the pan.
  6. Bake in a preheated 325 degree F oven for about 1 hour and 10 minutes.
  7. Test with a toothpick (or cake tester) to make to make sure it’s done.

Yummalicious, Retro Housewife. I'd love to try this. Do you have a post all about different sugars? I need to learn about that.
